Fig and Almond Granola Bars (Gluten Free)

I make these usually once every two weeks and take a bar into work to tide me over during the day. Toasting the almonds gives it a lovely depth of flavour and the using figs as a base makes the bars taste a bit of caramel. Although I have used almonds, raisins and figs in this recipe, feel free to switch things around. I have used chopped dates instead of raisins and toasted walnuts instead of almonds and it was still delicious.

You could bake this in a square baking tray and your bars would be lovely and equal. I can’t find my square baking tin so I made them in a normal cake tin.

Ingredients

145 g dried figs (remove the stalks)
150 ml black tea
100 g honey
1/4 teaspoon salt
160 g oats
60 g raisins
60 g almonds
60 g desiccated coconut

  1. Put the oven on at 180°C.
  2. Put the almonds in your baking tin, which you are going to use to bake the granola mix and put them to toast in the oven for approximately 10 minutes or until they smell toasted.
  3. Put the figs in a pot and add the black tea. Bring it to the boil and simmer for 5-8 mins or until soft and 2/3rd of the tea is left.
  4. Blend the figs and tea to form a puree.DSCF8665
  5. Mix the oats, salt, raisins, desiccated coconut in a bowl.DSCF8661
  6. Chop the almonds roughly and add to the bowl.
  7. Add the puree and the honey and mix thoroughly.DSCF8667
  8. Press the mixture into your lined tin.DSCF8670
  9. Bake for approximately 25 minutes and wait until it is completely cool before cutting up and removing the bars from the tin, otherwise it will fall apart.DSCF8684
